Our Story
Fox Hollow Vineyards is a family-owned and operated vineyard and winery located on 94 acres in the heart of Holmdel, New Jersey. The Casola family has been farming in Monmouth County for six generations, and Fox Hollow Vineyards grew from a desire to carry that agricultural tradition forward while creating something for future generations.
At our core, we are farmers first.
Our family has spent generations working the land, and that experience is at the heart of everything we do. From planting and pruning to canopy management, harvest and winemaking, members of the Casola family remain actively involved throughout the entire process.
Our vineyards are carefully managed with one goal in mind: growing exceptional grapes. We believe great wine begins in the vineyard, long before the grapes ever reach the winery. By spending countless hours in the field and allowing each variety to develop its full character, we strive to produce fruit that reflects both the quality of our farming and the unique growing conditions of our corner of New Jersey.
Tony Casola, a lifelong farmer, brings generations of agricultural knowledge and experience to the vineyard. His understanding of the land, the vines and the changing seasons has helped shape Fox Hollow into the vineyard it is today.
Winemaker Joe Casola continued that agricultural foundation with formal training in viticulture and enology at Surry Community College in Dobson, North Carolina. During his studies, he gained extensive hands-on vineyard and winery experience in the Yadkin Valley wine region.
Our winemaking philosophy begins with patience. Whenever the growing season allows, we give our grapes the time they need to fully mature before harvest. Rather than forcing the fruit into a predetermined style, we allow each vintage and variety to express its own character—creating wines that are representative of the grapes, the season and the place where they were grown.
Today, Fox Hollow Vineyards continues to evolve while remaining rooted in the same principles that have guided our family for generations: hard work, thoughtful farming, quality and respect for the land.
Our goal has always been to demonstrate the quality and character that can come from grapes grown here in New Jersey. We want every bottle of Fox Hollow wine to represent not only our vineyard, but also the potential of our region—and to create wines that people genuinely enjoy, share and remember.
